Vegetable oil spray for misting the pan

Flour for dusting the pan

1 package (18.25 ounces) plain German chocolate cake mix

1 container (15 ounces) coconut pecan frosting

1 cup water

1/3 cup vegetable oil

3 large eggs

Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 12-cup Bundt pan with vegetable oil spray, then dust with flour. Shake out the excess flour. Set the pan aside.

Place the cake mix, frosting, water, oil, and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look thick and well combined. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan in the oven.

Bake the cake until it springs back when lightly pressed with your finger, 48 to 52 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. Run a long, sharp knife around the edge of the cake and invert it onto a rack to cool completely, 20 minutes more.

Slide the cake onto a serving platter and slice.

** Store this cake, wrapped in plastic wrap or aluminum foil, or in a cake saver or under a glass dome, at room temperature for up to 1 week. Or freeze it, wrapped in foil, for up to 6 months. Thaw the cake overnight in the refrigerator before serving.

What is your favorite vegan hot chocolate recipe?

Category: QA

Question by slothums: What is your favorite vegan hot chocolate recipe?
I’m just curious. I have finally found a recipe that I like but am wondering how other vegans make their hot cocoa- since I’d love to try something new. I’m interested in dry mix versions as well as on the spot requires fresh “milk” versions.

(My current recipe is very basic: soy milk, sugar, cocoa, and very important… a big splash of vanilla extract.)

Suggestions for other variations I should try?

I don’t use the vanilla, but I will often add a spoonful of molasses or a spoonful of malt extract

A long, long time ago, the Sun God spent his days enjoying a very special secret treat: rich, dark cacao. Unlike the Wind God, the Sun God did not want to share this heavenly food with the creatures of the Earth. One day, the Wind God transformed himself into the Rana Azul, or Blue Frog, and he taught the children of the Earth where to find the secret cacao beans through song. A recipe for hot chocolate and a sprinkling of Spanish words and phrases enhance this intricately illustrated foodie fable.

This is a very nice chocolate cake that does not call for cocoa.

Chocolate Cake
12 servings
Prep: 25 minutes
Bake: 30 minutes
Cool: 1 hour
Stand: 1 hour

Ingredients
2-1/4 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup butter or margarine
1-3/4 cups sugar
2 eggs
3 ounces unsweetened chocolate, melted and cooled
1 teaspoon vanilla

Directions
1. Grease and lightly flour two 9×1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside. Stir together flour, baking powder, baking soda, and salt; set aside.

2. In a large mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add sugar; beat till well combined. Add eggs, one at a time, beating well after each. Beat in chocolate and vanilla. Add dry mixture and 1-1/4 cups water alternately to beaten mixture, beating on low speed after each addition just till combined. Pour batter into the prepared pan(s).

3. Bake in a 350 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove layer cakes from pans. Cool thoroughly on racks . Or, place 13×9-inch cake in pan on a wire rack; cool thoroughly. Frost with desired frosting. Makes 12 servings.
