This is a very nice chocolate cake that does not call for cocoa.
Chocolate Cake
12 servings
Prep: 25 minutes
Bake: 30 minutes
Cool: 1 hour
Stand: 1 hour
Ingredients
2-1/4 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2/3 cup butter or margarine
1-3/4 cups sugar
2 eggs
3 ounces unsweetened chocolate, melted and cooled
1 teaspoon vanilla
Directions
1. Grease and lightly flour two 9×1-1/2-inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside. Stir together flour, baking powder, baking soda, and salt; set aside.
2. In a large mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add sugar; beat till well combined. Add eggs, one at a time, beating well after each. Beat in chocolate and vanilla. Add dry mixture and 1-1/4 cups water alternately to beaten mixture, beating on low speed after each addition just till combined. Pour batter into the prepared pan(s).
3. Bake in a 350 degree F oven for 30 to 35 minutes or until a wooden toothpick comes out clean. Cool layer cakes in pans on wire racks for 10 minutes. Remove layer cakes from pans. Cool thoroughly on racks . Or, place 13×9-inch cake in pan on a wire rack; cool thoroughly. Frost with desired frosting. Makes 12 servings.

Chocolate : Uses and Recipes
Category: Cookbooks
Product Description
This booklet on chocolate is the eighth of a series on useful and edible plants to be published by Na Lima Kokua, the volunteers or Helping Hands of the National Tropical Botanical Garden. Chocolate is one of America’s favorite dessert ingredients and until recently had been thought to have a rather high fat content. Research now indicates that the type of saturated fat in pure chocolate, rather than having a cholesterol-raising effect, has a neutral effect. If you do not have to worry about your weight, you may eat limited amounts of chocolate, provided that it is not milk chocolate. Serving Angel Food cake with bittersweet chocolate frosting is perfectly acceptable on a cholesterol-controlled diet.
